We would coat the chicken with melted butter, and roll it in a mixture of breadcrumbs and Parmesan before baking. As a lover of chicken nuggets, this dish was so yummy and equally fun to make! The recipe I’m sharing with you today is a tropical twist on this childhood favorite. It uses a coconut topping to make chicken nuggets that are crispy, sweet, and packed with flavor. After five years of living in Seattle, I’m finally adjusting to the idea of warmer winters, and realizing I don’t need to be as bundled up as I would be in Connecticut. Normally this time of year, I’d be stocking up on chunky, knit sweaters, but this season, I find myself gravitating towards skirts. This faux leather skirt caught my eye a month ago online, and after seeing it in store, I had to have it. The pleated style gives the skirt a fun, flirty feel, and the faux leather is the perfect material for fall and winter!
